mimosa cake and good Women's Day (a little late = P)

With this recipe I participate in the contest "Cook the Book". The purpose of the contest is to find a recipe that represents a book. After careful selection I thought of the book by Lara Cardella "I wanted the pants " book is not new but that his time has received much buzz for telling (perhaps exaggerating a bit ') the status of women, especially the "female" Sicilian fortunately no longer exists today. FOR SPONGE CAKE
SERVES 4

With an electric mixer whisk the eggs with sugar until tripled in volume and come to an almost creamy consistency. At this point with a wooden spoon, gradually built the flour together with frumina.

FOR CREAM
INGREDIENTS 4 egg

Cut half the sponge, take the bottom and place on a serving platter and inzuppatela with pineapple juice, cover with the cream (even the side of the sponge).

Disponeteci the slices of pineapple, and cover with the whipped cream.


Now, make one last effort, take the remaining sponge cake put it in a blender and shredded all coarsely chopped and with that try to cover the entire whole cake.

This will give the cake a feeling of lightness and exquisite taste.
